Happy Spring Holidays! + Egg Cream

Regardless of wether you celebrate something important, or just the fact that the Judeo-Christian holiday gives you extra money/free time to spend.

Today, I'm going to share a recipe enjoyed at the start of the 20th century, when carbonated drinks were En Vogue. Carbonation stations known as 'Soda Fountains' used to serve pretty much anything carbonated and mixed with taste syrup, so carbonated milk became a popular sports' drink.

(This was largely an American thing, at least I've had very little luck finding information on it in Europe. Either way, this recipe is from the US.)

This particular variation has several tales of origin, but the one I prefer is that it was originally made with raw eggs. Mixing eggs or egg yolk into coffee, béchamel sauce, and every single food between heaven and earth was a quick and easy 19th century way to increase protein and calories for a population that laboured and walked far more than we do today.

I have yet to try it with raw eggs, but hope to do so soon.


Ingredients
-1/2 glass of Milk
-1/2 glass of Carbonated Water
-Coffee Syrup to taste. (Classic flavours are vanilla and chocolate)

Procedure
Pour the glass half-full with milk. S-L-O-W-L-Y add the water, then add as much or as little syrup as you desire.

Ahh, I see! I like eggdrink, so this seems like a reasonable - though presumably thinner - extrapolation from that. (Eggdrink is simply equal amounts of eggs and milk, mixed well so it's uniform consistency, and then you add a bit of vanilla sugar. Very good.)

That sounds like non-alchoholic eggnog, and also pretty delicious. Is it a Finnish thing? Because I can't find it when I google. Thanks for the tip! :D

I dunno what kind of a thing it is. I found it in an old, egg-specialised cookbook a long time ago. I remembered they drank "eggdrink" in Farmer Boy so I wanted to try it, but chances are good it's not the same thing, just another kind of drink with egg in it.

I say it's the same. At least until I go through my old cookbooks and can maybe try and see if there's a more definitive answer.
